It's that time of year again, Fig season.
We are blessed with having two fig trees that produce like crazy. This is our second year of fruiting season in this home. Our first summer we didn't have much time/energy/interest in the fruit but this year I wanted to try and utilize it in a couple of recipes.
Since we were getting low on our jelly for lunch PB&Js, it was time to get to picking & turn these figs into jam!
This was my first attempt at making jam, so after doing a little recipe searching online, I was ready to get started.
• quarter figs & remove any stems
• mix figs with water, sugar & lemon juice. Simmer covered for about an hour until the skins have soften up.
• Let cool, then mash figs with spoon to break down into smaller pieces for desired consistency.
• Transfer to jar & enjoy!
SIMPLE FIG JAM
Ingredients:
-12-16 oz ripe figs
-1/2 cup water
-3/4 cup sugar
-1/2 lemon juiced
(next time I would do less sugar, add more lemon & zest)
Steps:
-Bring water & sugar to a boil. Mix to dissolve all the sugar.
-Add quartered figs & lemon juice. Mix to incorporate.
-Reduce heat to low. Simmer covered for about 1 hour.
-Check fig skins for doneness - they should be soft enough to break down with a wooden spoon.
-Remove from heat and let cool.
-Using your wooden spoon (or processor), break down figs into desired consistency.
-Transfer to jar & keep refrigerated. Should last a couple of weeks.
